Vanilla Icebox Cookies Recipe
Ingredients
| All purpose flour | 1 3/4 Cup (16 tbs) | |
| Salt | 1 Pinch | |
| Baking powder | 2 Teaspoon | |
| Butter | 1/2 Cup (16 tbs) | |
| Sugar | 1 Cup (16 tbs) | |
| 1 egg, slightly beaten | ||
| Vanilla | 1 Teaspoon | |
| 1/2 teaspoon grated lemon rind (optional) | ||
Directions
Sift flour with salt and baking powder.
Cream butter thoroughly, gradually adding sugar and beat until light.
Beat in the egg, add vanilla and grated lemon rind, if you like, and stir in the sifted dry ingredients.
Chill mixture one hour or until firm enough to handle and shape into long rolls 2 inches in diameter.
Roll in wax paper or foil and chill at least 24 hours, or freeze.
Cut in very thin slices and bake on a greased baking sheet in a preheated hot oven (400°F) for 8-10 minutes or until lightly browned.
