Ingredients

 
1 cup basmati rice
 
2 tbsp oil
 
1 tbsp ghee
 
1 tsp mustard seeds
 
1 tsp urad dal
 
1 tsp chana dal
 
1 count dry red chillies
 
1/4 count finely chopped onion
 
1/2 cup chopped eggplant ( vangi )
 
1/4 cup chopped capsicum
 
2 pinches turmeric powder
 
1/4 cup squeezed tamarind water
 
3 tsp mtr vangi bhaath powder
 
a few curry leaves
 
required amount of salt
 
To garnish:
 
1 tsp ghee
 
1 tsp chopped cashewnuts

Directions

* Cook 1 cup basmati rice with 2 cups of water and 1/4 tsp of salt.

* Heat oil in a big non stick pan and add mustard seeds and let it splutter, then add urad dal chana dal, 1 dry red chilli, curry leaves and onions, fry till golden brown.

* Now add the chopped brinjal and chopped capsicum pieces, turmeric powder, salt and squeezed tamarind water for the vegetables to cook. Close lid and cook till the vegetables are half cooked.

* Now add the MTR vangi bhaath masala powder and cook till the vegetables are fully cooked.

* Add the cooked rice to the vegetables and mix all till nicley coated.

* Heat ghee in a small non stick pan and fry cashew and coconut till light brown and add this to the rice and mix.

* serve hot with onion raita.
