Ingredients

 
1 15.5-oz (439 g) can salmon undrained
 
1 lightly beaten egg
 
1 cup (250 mL) fresh breadcrumbs
 
1/4 cup (60 mL) whipping or sour cream
 
2 tbsp (30 mL) celery leaves, minced
 
1/2 tsp (2 mL) curry powder
 
1 small onion, grated
 
1 tsp (5 mL) salt
 
1/4 tsp (1 mL) pepper
 
Juice and grated rind of half a lemon

Directions

Empty the can of salmon into a bowl, crush the bones with a fork, flake the undrained fish, and mix together with a fork.
Add the remaining ingredients.
Mix thoroughly and place in a 9 X 5-inch (23 x 13 cm) loaf pan.
Cover with waxed paper.
Microwave 6 to 9 minutes at HIGH.
Let stand 5 minutes.
Unmold and serve.
