Ingredients

1/2 cup cashew

1/2 cup dates

1/2 cup water

1/2 tsp vanilla

1/2 cup coconut

1/2 cup cocoa

Directions

I soaked half a cup of raw cashews overnight and I put them in a blender with half a cup of dates that I also soaked in some water €“ I think it was half a cup of water.
I added one banana and half a teaspoon of vanilla.
I blended it for a while and then added half a cup of coconut and half a cup of cocoa.
I was planning to buy some plastic heart shaped moulds but I couldn€™t find any so I ended up with these paper cake cups.
I poured some mixture into 30 cups and then sprinkled some coconut on top.
I put half of them in the fridge and half in the freezer. The next day the ones that were in the fridge were kind of moussey and the ones in the freezer came out more like ice cream.
They both tasted pretty good €¦ but I don€™t think the paper cups worked very well.
I think I€™ll keep looking for some moulds.
