Valentine’s Day Herb Crusted Rack of Lamb Recipe
Nothing is more romantic than an intimate dinner on Valentine’s Day. This Valentine’s Day, impress your loved one with a beautiful rack of lamb crusted with herbes de Provence, a traditional blend of aromatic dried herbs including rosemary, thyme, chervil and summer savory.

Ingredients
| 1 small rack of lamb, frenched | ||
| Olive oil | 2 Tablespoon | |
| Plain bread crumbs | 1 Cup (16 tbs) | |
| Herbes de provence | 1 Teaspoon | |
| Garlic | 1 Teaspoon, chopped | |
| Olive oil | 3 Tablespoon | |
| Dijon Mustard | 2 Tablespoon | |
| Olive oil spray | ||
| Salt and pepper to season | ||

Directions
Preheat oven to 375 degrees F. In a large skillet, heat the olive oil. Season each side of the rack of lamb with salt and pepper and sear the lamb on all sides. Let cool. Combine bread crumbs, herbes de Provence, garlic and olive oil. Brush the rack of lamb with Dijon mustard and coat with the bread crumb mixture to form a crust. Put the rack of lamb in a pan sprayed with oil. Dress (spray) lamb with olive oil so that the lamb does not burn.
Roast 20 minutes at 375 degrees Fahrenheit for medium-rare. Let the lamb rest for 10 minutes. Slice and serve. Optionally, deglaze the roasting pan with ½ cup red wine to create a sauce and drizzle over the lamb.
