Ingredients

 
Ingredients for filling
 
4 potatoes boiled and potatoes
 
1 c onion minced
 
1/2 tsp ginger and garlic paste
 
1/2 tbsp oil
 
1 tsp cumin seeds
 
Pinch of turmeric
 
Pinch of asofetida
 
Salt to taste
 
2 minced + 3-4 whole green chilis
 
Chopped coriander
 
2 tsp lemon juice
 
Ingredients for batter
 
1/2 c chickpea flour
 
2 tbsp rice flour
 
Salt to taste
 
1/4 c water
 
1 tsp oil + oil for deep frying
 
Pinch of baking soda

Directions

Mash the potaotes coarsely.
Heat oil and add cumin, turmeric, asofetida, ginger-garlic paste.
Stir and add onions saute until soft.
Add salt. Now add this mixture to potatoes.
Add coriander, lemon juice, chilis.
To make batter, add water and other ingredients to form a smooth paste. It should neither be too thick nor too thin.
Make balls of the potato mixture.
Heat oil for deep frying the vadas.
Coat the balls in chickpea batter and fry them until golden brown.
Fry some green chilis as well.
Now serve the vadas with fried green chilis.
