Rump Steak
Olive Oil

Rice Noodles (thin)
4 Kaffir Lime Leaves
3 Cloves Garlic
3 Long Red Chillies
1 Tablespoon Fish Sauce
Juice of 1 Lime
¼ cup Palm Sugar or Brown Sugar
Mixed Green Leaves
4 Radish sliced finely
2 Lebanese Cucumber sliced finely
3 Roma Tomatoes sliced
Red Capsicum halved and sliced finely
Directions
Make the sauce first.
• Cut the kaffir lime leaves into very fine strips. Crush the garlic and chillies together. Combine the fish sauce, juice of lime, and sugar, with the kaffir leaves, garlic and chillies.
Cooking the rump steak.
• Heat a BBQ or skillet
• Rub olive oil into the steak and season with salt and pepper if you like
• Cook to your liking – let stand for 5 min before slicing thinly.
Cooking the rice noodles.
• Place rice noodles into a large bowl and poor boiling water to cover.
• Let stand for 5 min.
• Drain and put aside.
Putting it all together.
• In a bowl place the rice noodles with the leaf mix on top.
• Sprinkle the sliced ingredients over the leaf mix.
• Place sliced beef over the top and spoon the kaffir leave marinade over the salad.
