Recipe Story

A quick and tasty meal for vegetarians, vegans and the gluten intolerant.

Ingredients

 
You will Need
 
2 cans lentils
 
2 brown onions chopped finely
 
2 cloves garlic crushed
 
2 long red chillies seeded and sliced
 
5 tomatoes chopped (or 1 can tomatoes)
 
2 yellow capsicums sliced
 
3 zucchinis sliced
 
2 tspn cumin powder
 
1 tblsp Olive Oil
 
Fresh coriander to serve
 
Cous Cous to serve
 
Salt & Pepper to taste
 
Baby Cos Lettuce Salad
 
2 baby cos lettuce
 
2 lebanese cucumbers sliced
 
Flat leaf parsley 1 bunch chopped
 
Mint ½ cup chopped
 
Juice 1 lemon
 
1 tblsp Olive Oil (www.cobramestate.com.au)
 
1 tblsp Maggie Beers’ Verjuice (www.maggiebeer.com.au)
 
Yoghurt & Mint
 
1 tub Low fat unsweetened natural yoghurt
 
Mint ½ cup chopped
 
Splash Olive Oil
 
Salt and Pepper to taste

Directions

Making the Spicy Lentils
Sauté the onions, chillie and garlic in the olive oil until soft and golden. Add tomatoes and cook for a couple of minutes. Add lentils, zucchini and capsicum and cook for about 5 minutes. Finally add the chillies and cumin. Cover and simmer on low for about 20 minutes or until all vegetables are cooked to your liking.
For the Cous Cous, follow the directions on the packet.

Baby Cos Lettuce Salad
Wash the lettuce and combine with the sliced cucumbers, chopped bunch of flat leaf parsley and ½ cup chopped fresh mint. To make the dressing, combine oil, lemon and verjuice, adding salt and pepper to taste.

Yoghurt & Mint
Combine the yoghurt with chopped mint, splash of olive oil and salt and pepper to taste. Stand aside for at least 30 minutes before serving to allow flavors to infuse.
