Ingredients

 
Urad dal-1/2 cup, skinned
 
Long grain rice-1/2 cup
 
Water-2 1/2 cups
 
Turmeric powder -1/2 teaspoon
 
Salt- to taste
 
Red chili powder-1 teaspoon
 
Garam masala-1 teaspoon
 
Ghee -1 tablespoon
 
Dash of asafoetida powder
 
White cumin seeds-1 teaspoon

Directions

GETTING READY
1)Clean, wash and soak the dal overnight.
2)Wash and soak the rice for 30 minutes.

MAKING
3)In a saucepan, add dal and rice and water. Cook them on medium heat.
4)Add next four ingredients and bring to boil.
5)Decrease heat and cook until dal is tender
6)In a small pan, heat ghee and add asafoetida and cumin. Sprinkle it on khichdi.

SERVING
7)Serve the khichdi hot.

TIPS
This preparation is traditionally moist when ready. But feel free to adjust the amount of water; or drain it off in later stages, if you prefer a dry pulao like preparation.
