Upside-down Date Pudding Recipe
The upside down date pudding is a baked pudding prepared with flour, eggs and sugar along with dates and walnuts. The upside down pudding date pudding is baked with a brown sugar sauce over it. Rich and chewy, the upside down date pudding can be served as such or with whipped cream.
Ingredients
1 cup pitted dates, cut up
1 cup boiling water
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
2 tablespoons butter or margarine, melted
1 1/2 cups sifted enriched flour
1 teaspoon soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped California walnuts
1 recipe Brown-sugar Sauce
Directions
Combine dates and water.
Blend sugars, egg, and butter.
Sift together flour, soda, baking powder, and salt; add to sugar mixture.
Stir in nuts and cooled date mixture.
Pour into 11x7x1 1/2 inch baking dish.
Top with Brown sugar Sauce: Combine 1 1/2 cups brown sugar, 1 tablespoon butter or margarine, and 1 1/2 cups boiling water.
Bake in moderate oven (375°) about 40 minutes.
Cut in squares; invert on plates.
Serve warm with whipped cream.
