Upside Down Muffins Recipe
Ingredients
2 tbsp (30 mL) butter
1/2 cup (125 mL) maple syrup
1/4 cup (60 mL) walnuts, coarsely chopped
2 cups (500 mL) flour
3 tsp (15 mL) baking powder
1 tsp (5 mL) cinnamon or allspice
1/2 tsp (2 mL) salt
3 tbsp (50 mL) maple syrup
1 cup (250 mL) milk
1/4 cup (60 mL) vegetable oil
1 egg
Directions
€¢ Place butter and the 1/2 cup (125 mL) maple syrup in a measuring cup. Microwave 3 minutes at HIGH.
€¢ Place 1 teaspoon (5 mL) of hot syrup in the bottom of each muffin pan.
€¢ Then sprinkle 1 teaspoon (5 mL) of chopped walnuts over the syrup.
€¢ Sift together in a large bowl the flour, baking powder, cinnamon or allspice and the salt.
€¢ Stir together the remaining maple syrup, milk, oil and egg. Pour into the dry ingredients all at once and stir just until moistened.
€¢ Fill each cup only 2/3 full over the syrup.
€¢ Place 1 teaspoon (5 mL) of hot syrup in the bottom of each muffin pan.
