Upside Down Cake Recipe
Upside Down Cake are simply the best desserts! I have had. My cake crazy children and husband often compete for this yummy Upside Down Cake. Try them for yourself!
Ingredients
2 tbsp. butter or margarine
1 egg unbeaten
1/3 c. brown sugar
1 1/4 c. sifted all purpose flour
1/2 tin crushed pineapple or other fruit
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 cup juice
1/3 c. soft shortening
1 tsp. vanilla
1/4 c. sugar
Directions
1. Prepare pan, melt the butter and brush the sides of the pan.
2. Sprinkle the bottom of the pan with brown sugar and arrange fruit on the bottom of the pan.
3. Mix the remaining ingredients, using the standard cake method, the juice taking the place of milk.
4. Pour cake batter over the fruit in the pan and bake.
