Uova Strapazzate Recipe

Ingredients
| Butter | 4 Tablespoon | |
| Pepper red | 1 To taste, chopped | |
| Green pepper | 1 To taste, chopped | |
| Eggs | 8 Small | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1 Pinch | |
| Parmesan cheese | 4 Tablespoon, grated |
Directions
Heat the butter in a frying pan and cook the peppers for 3 minutes.
Beat the eggs with the salt and pepper and add to the pan.
Scramble gently until eggs are almost firm, then add the cheese and stir for 30 seconds more.
Serve immediately so the eggs don't overcook.
