Uncooked Cabbage Relish Recipe

Ingredients

 
2 quarts shredded cabbage
 
2 green peppers, chopped
 
2 cups chopped onion
 
1/3 cup salt
 
3/4 cup sugar
 
1/2 teaspoon cinnamon
 
1/2 teaspoon ground cloves
 
1/2 teaspoon ground allspice
 
1 1/2 tablespoons dry mustard
 
1 tablespoon grated horse radish
 
1 cup cider vinegar, approx imately

Directions

Mix the cabbage, peppers, onion and salt; let stand overnight.
Drain and rinse twice in cold water.
Drain well.
Mix the sugar, spices and horseradish with the cabbage.
Pack lightly into sterilized jars, leaving one inch headspace.
Add vinegar to fill the jars and seal.
Let stand at least a day before using.
Store the relish in the refrigerator.
