Uman Recipe
Ingredients
| 500 g firm, boneless fish fillets cut in 5 cm pieces. | ||
| Salt | 1/2 Teaspoon | |
| 1/2 cup dessicated coconut | ||
| Chilli powder | 1/2 Teaspoon | |
| Turmeric | 1 Teaspoon | |
| Coriander powder | 1 Teaspoon | |
| Water | 1/2 Cup (16 tbs) | |
| Safflower oil | 1 Tablespoon | |
| Onion | 1 Medium, finely chopped | |
| 1 teaspoon tamarind concen-trate | ||
| Chopped fresh coriander, to garnish | ||
Directions
Mix fish with salt in bowl, refrigerate.
Grind coconut, chilli, turmeric, coriander in dry grinder to very fine powder.
Mix coconut powder with water, set aside.
Heat oil in pan, saute onion until golden brown.
Add tamarind concentrate and fish, stir gently on medium heat for 1 minute, add coconut liquid , bring to boil, simmer for 1 minute, remove from heat, adjust salt, chilli to taste.
Grind coconut, chilli, turmeric, coriander in dry grinder to very fine powder.
