Ukrainian Christmas Doughnuts Recipe

Ingredients
1/4 cup milk
3 tablespoons sugar
2 tablespoons unsalted butter
1/2 teaspoon salt
1 - 1 1/2 cups flour
1/2 tablespoon active dry yeast
1/2 teaspoon grated lemon peel
1 egg
1 egg yolk
Vegetable oil for deep frying
Confectioners' Icing
Directions
1 Heat milk, sugar, butter, and salt to hot (120°-130°F). Combine 1 cup flour, yeast, and lemon peel in mixing bowl. Mix thoroughly.
2 Combine milk mixture, yeast mixture, egg, and egg yolk. Mix thoroughly.
3 Add enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
5 Punch down dough. Roll out dough 1/8 inch thick. Cut into 2 1/2-inch circles. Place 1 teaspoon of desired filling on half the circles; cover with plain circles. Using water, moisten edges and press them firmly to seal.
6 Cover; let rise in warm place until double€”about 30 minutes.
7 In deep hot fat (375°F), fry a few at a time€”about 2 minutes on each side. Drain on paper toweling. When cool, frost with Confectioners' Icing.
