Uganda Peanut Butter Chicken Recipe
Ingredients
| 2 broiler-fryers (about 2 pounds each) cut in serving-size pieces | ||
| Vegetable oil | 1/4 Cup (16 tbs) | |
| Salt | 2 Teaspoon | |
| Curry powder | 1 Teaspoon | |
| Sliced onion | 1 Large, peeled | |
| 1 large sweet red pepper halved seeded and cut in strips | ||
| 1 large tomato, sliced thin | ||
| Rice | 1 1/2 Cup (16 tbs), uncooked | |
| 1/4 cup crunchy peanut butter | ||
| Warm water | 1/4 Cup (16 tbs) | |
Directions
Brown chicken pieces, part at a time, in vegetable oil in a Dutch oven or large frying pan; remove and set aside.
Stir salt and curry powder into drippings in Dutch oven; cook 1 minute.
Stir in onion, red pepper, and tomato; cover.
Simmer 5 minutes.
Return chicken to Dutch oven; cover again.
Simmer 30 minutes, or until chicken is tender.
While chicken cooks, cook rice, following label directions; spoon onto a large deep serving platter.
Arrange chicken on top; keep warm.
Blend peanut butter with warm water in a cup; stir into vegetable mixture in Dutch oven; heat to boiling.
Spoon over chicken and rice.

Yea if you are taking recipes from your favorite cookbook then you must mention that or add a story to your recipe mentioning why you like this recipe, when you tried it out, how did you find the recipe etc.
