 1 English cucumber, coarsely grated
 Kosher salt1 Teaspoon
 Plain yogurt1 Cup (16 tbs)
 1 cup Yogurt Cheese
 1/4 to 1/2 teaspoon minced garlic, pureed in a mortar
 2 tablespoons chopped fresh mint, or 2 teaspoons dried mint
 Fresh lemon juice to taste
 Salt To Taste

Directions

Combine the cucumber and salt in a colander and let it drain for 15 minutes.
Squeeze out the excess moisture.
Put the cucumber in a medium bowl and stir in the yogurt, yogurt cheese, garlic, mint, and lemon juice.
Adjust the seasoning with salt if necessary.
