This is the great stuff they put on Gyros and Souvlaki and all those great Greek dishes. Takes about three minutes to do at home, and so easy and delicious you'll want to always have some on hand.

Directions

MAKING
1. Chop garlic and shallots in a food processor and then change the blades and shred the cucumber and onions. Empty the contents into a large mixing bowl.
2. Add the lemon juice, Greek yogurt, olive oil, red wine vinegar and the salt to the bowl. Stir well.

SERVING
3. Garnish the tzatziki with tomatoes wedges and some olives.
4. Serve it with Greek flat bread and grilled seafood, chicken, lamb or beef kabobs or use it as a spread.

TIPS
You can put salt and drain the cucumber if you like a thick sauce.
