Two Tone Zucchini Gelatin Recipe
Ingredients
| Plain gelatin 1 tablespoon | ||
| Cold water | 1/2 Cup (16 tbs) | |
| Zucchini 1-1/4 cups cubed | ||
| Frozen concentrated apple juice 1/2 cup, thawed | ||
| Green food coloring | 2 Drop | |
| Frozen concentrated apple juice 1/2 cup | ||
Directions
Soak gelatin in water.
Simmer zucchini in 1/2 cup apple juice until tender.
Blend in blender.
Add food coloring.
Add soaked gelatin; blend well.
Add frozen apple juice; blend.
Add more water, if necessary, to bring total amount to just under 2 cups.
Pour into individual molds or serving glasses.
Chill.
This forms 2 layers, one solid dark green, one fluffy pale green.
