Ingredients

 
2 tablespoons vegetable oil
 
2 tablespoons butter or margarine
 
6 green onions, sliced
 
4 carrots, scraped, quartered and sliced
 
2 medium zucchini, sliced
 
2 large yellow squash, halved and sliced
 
1 medium-size green pepper, chopped
 
1 teaspoon lemon-pepper seasoning
 
1/2 teaspoon salt

Directions

Pour oil around top of a preheated wok or large skillet, add butter, and allow to heat at medium high (325°) for 2 minutes.
Add vegetables and seasonings, stir-fry 5 minutes.
Cover and simmer an additional 5 minutes or until vegetables are crisp-tender.
Serve immediately.
