3 cups chilled cooked rice
 
1 15-ounce can pinto beans, rinsed and drained
 
1 15-ounce can black beans, rinsed and drained
 
1 10-ounce package frozen peas, thawed
 
1 cup sliced celery
 
1/2 cup chopped red onion
 
2 4 1/2-ounce cans diced green chili peppers, drained
 
1/4 cup snipped fresh cilantro or parsley
 
1 recipe Garlic Dressing or 3/4 cup bottled Italian salad dressing

Directions

1 In a large bowl combine rice, beans, peas, celery, onion, chili peppers, and cilantro. Pour dressing over rice mixture; toss to coat. Cover; chill until serving time or for up to 24 hours.
