Two Bean Chili Recipe

The two bean chili is a beef and sausage chili made with garbanzo and kidney beans. Herbed and spiced with garlic, the two bean chili is cooked along with vegetables. Made with added olives and cheese, the two bean chili can be served over or with rice for a full meal.

Ingredients

 
1 pound sweet Italian sausage, removed from casing
 
1 pound ground beef
 
2 medium onions, chopped
 
1 large green pepper, chopped
 
3 cloves garlic, minced
 
1/4 cup flour
 
3 tablespoons chili powder
 
2 teaspoons ground cumin
 
2 teaspoons dried basil leaves
 
2 teaspoons dried oregano leaves
 
1 teaspoon salt
 
2 cans (28 ounces each) Italian- style tomatoes, undrained
 
3 tablespoons Worcestershire sauce
 
1 1/4 teaspoons TABASCO pepper sauce
 
1 can (20 ounces) chick peas, drained
 
1 can (15 1/2 ounces) red kidney beans, drained
 
Sliced ripe olives, chopped onion, chopped green pepper, chopped tomato, shredded cheese and cooked rice (optional)

Directions

In large heavy saucepot or Dutch oven cook sausage, beef, onions, green pepper and garlic about 20 minutes or until meats are browned and vegetables are tender; drain off fat.
Stir in flour, chili powder, cumin, basil, oregano and salt; cook 1 minute.
Add tomatoes; break up with fork.
Stir in Worcestershire sauce and Tabasco sauce.
Cover and simmer 1 hour, adding water if necessary; stir occasionally.
Stir in chick peas and kidney beans.
Cook until heated through.
Serve with sliced olives, chopped onion, chopped green pepper, chopped tomato, shredded cheese and rice, if desired.
