Ingredients

 Lean pork1 pound
 Vegetable oil2 Tablespoon
 1 large green pepper, cut into 1/4 inch strips
 Scallion1 , sliced
 Ginger root1 Teaspoon, grated
 Garlic1 Clove (5gm), grated
 Black bean sauce1 Tablespoon
 Water2 Tablespoon
 2 tablespoons hoisin sauce
 Dry sherry1 Tablespoon
 Chili paste1/2 Teaspoon
 Sugar1 Teaspoon
 Salt1/2 Teaspoon

Directions

Cover pork with water and simmer, covered, for 1 hour, until done.
Cool and slice into Winch slices.
Heat oil in wok and stir-fry green pepper for 1 minute.
Add pork and scallion and continue to stirfry for 1 minute.
Combine remaining ingredients and add to pork and green pepper mixture.
Heat thoroughly and serve at once with boiled or fried rice.
