Twice Fried Shrimps For Appetizers Recipe
Ingredients
| Jumbo shrimps - 2 pounds, shelled and deveined | ||
| Seasoned all-purpose flour | ||
| Egg | 1 | |
| Fat - for deep frying | ||
| Butter | 1/4 Cup (16 tbs) | |
| Olive oil | 1/4 Cup (16 tbs) | |
| Large garlic cloves - 2, mashed | ||
| Parsley | 1 Tablespoon, minced | |
| Dried basil | 1/2 Teaspoon, crumbled | |
Directions
MAKING
1 Flatten each shrimp.
2 Season the flour with 1 teaspoon salt and some pepper (for each cup of flour)
3 Roll the shrimps in the flour mixture.
4 Dip in the egg.
5 In a frying pan, heat oil (370°Fahrenheit on a frying thermometer) and fry the shrimps in deep hot fat for 1 minute only.
6 Drain well.
7 In a chafing dish or electric skillet melt butter and olive oil; add garlic, parsley, and basil.
8 Heat for a minute or two, add the shrimps and reheat.
SERVING
9 Serve on toothpicks.
