Twice Cooked Pork With Bean Sauce Recipe

Ingredients

 
1 lb. pork butt or shoulder (2/3 lean and 1/3 fat)
 
1 green onion
 
1 slice fresh ginger root
 
1 teaspoon rice wine or dry sherry
 
Seasoning sauce:
 
1-1/2 teaspoons rice wine or dry sherry
 
1 tablespoon sweet bean sauce
 
1 tablespoon hot bean sauce
 
2 tablespoons soy sauce
 
1 teaspoon sugar
 
1/4 cup vegetable oil
 
3 tablespoons vegetable oil
 
3 garlic cloves, sliced
 
1 green pepper, cut in 1-1/2-inch squares
 
3 cabbage leaves, cut in 1-1/2-inch squares
 
1 tablespoon vegetable oil

Directions

Place pork in a large saucepan; add water to cover.
Add green onion, ginger root and wine.
Bring to a boil over high heat.
Reduce heat to medium and cook 30 minutes.
Remove pork from cooking liquid and place on a platter to cool.
Mix ingredients for seasoning sauce in a small bowl; set aside.
Cut cooled pork into thin slices.
Heat 3 tablespoons oil in a wok over high heat 30 seconds.
Stir-fry pork slices 1 minute.
Add garlic, green pepper and cabbage.
Stir-fry 1 minute.
Remove pork and vegetables with a slotted spoon, draining well over wok; set aside.
Heat 1 tablespoon oil in wok over medium heat 30 seconds.
Add seasoning sauce.
Stir-fry 10 seconds.
Return pork and vegetables to wok and mix well with sauce.

This twice cooked pork is nice and easy to prepare. Compare this recipe with the Chinese cook book. It miss out black bean sauce and Hoisin sauce. Anyway it is a time-saving treat for a family.
