Twice-Baked Potatoes Deluxe Recipe
Ingredients

| Margarine or butter | ||
| Milk | ||
| Onion | 1/4 Cup (16 tbs), chopped | |
| Cheddar Cheese | 3/4 Cup (16 tbs), grated | |
| Monterey jack cheese | 3/4 Cup (16 tbs), grated | |
| Frozen chopped spinach | 1 box, pressed | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Prepare and bake 6 baking potatoes in a preheated 400° oven for 1 hour.
While potatoes are still hot, slice each potato in half lengthwise.
Carefully scoop pulp into a large mixing bowl, leaving a thin shell.
Mash potatoes, adding salt, pepper and margarine to taste and milk as needed.
Stir in onion, cheddar and Jack cheeses and spinach.
Spoon potato mixture back into the shells.
Bake potato halves in a preheated 400° oven for 20 minutes or until lightly browned.
