 Potatoes4 Medium
 Butter/Margarine2 Tablespoon
 Milk
 Mushrooms1 2 Ounce, chopped
 2 slices American cheese, halved diagonally
 Paprika, salt and pepper for seasoning

Directions

Scrub potatoes thoroughly and prick with a fork.
Bake potatoes as directed.
Cut a lengthwise slice from top of each potato; discard skin from slice.
Reserving potato shells, scoop out the insides and add to potato portions from top slices; mash.
Add butter beat in enough milk to make a stiff consistency.
Season the taste with salt and pepper.
Stir in mushrooms.
Pile mashed potato mixture into potato shells.
Place 10x6x2-inch baking dish.
Return to oven; bake at 425 lightly browned, 20 to 25 minutes.
Place cheese potatoes; sprinkle with paprika.
Bake till cheese melts, 3 minutes longer.
Microwave cooking directions: Scrub potatoes; prick with fork.
In countertop microwave oven arrange potatoes on paper toweling, leaving at least 1 inch between potatoes.
Micro-cook, uncovered, till potatoes are done, 13 to 15 minutes for four potatoes.
(Allow 6 to 8 minutes for two potatoes; 17 to 19 minutes for six potatoes.) Halfway through cooking time, rearrange potatoes and turn over.
Prepare potato shells and mashed potato mixture as above.
Pile mashed potato mixture into potato shells.
Place in 10x6x2-inch nonmetal baking dish.
Micro-cook, uncovered, till potatoes are heated through, about 5 minutes, rearranging potatoes twice.
Place cheese atop potatoes.
Sprinkle with paprika.
Micro-cook 30 seconds longer.
