Twice Baked Creamy Potatoes Recipe
I got to try out this Twice Baked Creamy Potatoes at my friend's place. My GOD, It was simply mind blowing! Stock up on more and more potato as you will want to make this Twice Baked Creamy Potatoes time and again. You don't have to be an expert to judge how delicious and flavorful this dish is.
Ingredients
2 potatoes (3 ounces each), well scrubbed and baked
1/4 cup plain low-fat yogurt
2 teaspoons margarine, melted
1 teaspoon chopped chives
Dash each salt and white pepper
Directions
Preheat oven to 350°F.
Cut each baked potato in half lengthwise.
Scoop pulp from 2 halves into bowl, leaving firm shells; reserve shells.
Scoop pulp from remaining 2 halves, discarding skins; mash pulp until smooth.
Add remaining ingredients and stir to combine.
Spoon half of potato mixture into each reserved shell; transfer to baking sheet and bake until thoroughly heated, about 20 minutes.
