Tutti-Frutti Barbancourt Recipe
The tutti frutti barbancourt is a cooked fruit dessert flavored with rum and honey. Spiced with cloves and cinnamon with added orange and lime peel, the tutti frutti barbancourt can be served over ice cream or cookies. I like to decorate with them too. so use them any way you please!
Ingredients
| Strawberries | 2 Quart | |
| Honey | 1 Quart | |
| Cinnamon sticks | 4 | |
| Whole Cloves | 32 | |
| Orange peel | 1/4 Cup (16 tbs), grated | |
| 1/4 cup grated lime peel | ||
| Mangoes, peeled and cut in pieces | ||
| Bananas, sliced | ||
| Pineapple, cubed Barbancourt rum or other amber rum | ||
Directions
Cook strawberries in honey and enough water to cover over low heat 5 minutes.
Skim thoroughly; spoon an equal amount into each of four 2 quart wide mouthed mason jars.
Put into, each jar 1 cinnamon stick, 8 cloves, and 1 tablespoon each orange and lime peel.
When cool, fill jars with desired amount of remaining fruit and rum.
Stir, cover tightly, and refrigerate 3 months.
Serve tutti-frutti over ice cream or plain, with cookies.
