Tutti Frutti Loaf Recipe
Ingredients
1 1/2 cups finely chopped mixed dried fruit
3/4 cup butter, softened
1/2 cup honey
2 eggs
2 tablespoons milk
1/2 teaspoon vanilla extract
1 3/4 cups sifted whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
Directions
Place fruit into a medium-size bowl, and plump in enough water to cover for 15 minutes.
Drain well.
Preheat oven to 350° F.
Butter a 9 X 5 X 3-inch loaf pan.
Beat together butter and honey in a large bowl.
Beat in eggs, milk, and vanilla.
Stir in fruit.
Sift flour, baking powder, and baking soda into wet ingredients, mixing well.
Turn into prepared pan and bake on middle shelf of oven for about 45 to 50 minutes, or until a cake tester or food pick inserted into the center comes out clean.
Cool in pan about 10 minutes, and then turn out onto a wire rack.
