Tuscan Tuna On Focaccia Recipe
Ingredients
| White kidney beans | 1 Can (10oz), drained, rinsed | |
| Basil leaves | 1/2 Cup (16 tbs), chopped | |
| Capers | 3 Tablespoon, chopped | |
| Lemon juice | 2 Tablespoon | |
| Olive oil | 2 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Ground black pepper | 1/4 Teaspoon | |
| 1 can tuna packed in water, drained | ||
| Watercress | 1 Bunch (100gm), trimmed | |
| 1 round or square focaccia bread, cut horizontally in half | ||
| Ripe tomatoes | 2 , thinly sliced | |
Directions
In large bowl, mash 1 cup kidney beans.
Stir in basil, capers, lemon juice, olive oil, salt, and pepper.
Add tuna, watercress, and remaining beans; toss well.
Spoon tuna mixture on bottom of focaccia; top with tomato slices.
Replace top of focaccia.
