Turtle Bean Stew Recipe
Ingredients
| Black beans | 675 Gram | |
| 115 g diced coarse ham | ||
| Bacon | 115 Gram, diced | |
| Garlic | 2 Clove (5gm), minced | |
| Onion | 1 , sliced | |
| Celery stalks | 2 , diced | |
| 500 ml peeled, seeded, chopped tomatoes | ||
| Beef broth | 1 Large | |
| Worcestershire sauce | 5 Milliliter | |
| Tabasco sauce | 1 Milliliter | |
| 1 ml each of pepper, oregano, thyme, onion powder, basil, cayenne | ||
| 5 ml each of paprika, salt | ||
| Chili powder | 3 Milliliter | |
Directions
GETTING READY
1) Cover black beans with water and keep aside for 8 hours or a whole night.
MAKING
2) On the following day, drain the beans and keep aside.
3) Take a large kettle and brown ham and bacon in it.
4) Add in garlic, onion, and celery and sauté until soft.
5) Stir in tomatoes, broth, beans, Worcestershire, Tabasco sauce and seasonings.
6) Allow the mixture to come to a boil and then allow simmering for 2 1/2-3 hours after reducing heat.
SERVING
7) Serve hot.
