Turnips Florentine Recipe
Ingredients
White Turnips - 1 lb (about 4 medium)
Boiling water
Salt - 1/2 teaspoon
Instant minced onion - 1 teaspoon
Lemon juice - 1 tablespoon
Butter or margarine - 2 tablespoons
Raw spinach - 1/2 cup, finely chopped
Directions
GETTING READY
1) Wash the turnips and pare them.
2) Cut each of them into quarters.
MAKING
4) In a small saucepan, put 1 inch boiling water, place the turnips combined with salt and onion.
5) Cover the saucepan and cook turnips for 25 to 30 minutes, or until tender.
6) Drain turnips well.
7) Mash till smooth.
8) Return mashed turnips to heat.
9) Cook, over low heat, 1 to 2 minutes to dry out.
10) Add lemon juice, butter, and spinach, mixing well.
SERVING
11) Serve the turnips at once.
