 1 pound purple-topped turnips, peeled and grated
 Crushed pineapple can1 Cup (16 tbs), undrained
 Olive oil3 Tablespoon
 Lemon juice1 Tablespoon

 Mint2 Tablespoon, minced
 Mint sprigs4 (For garnishing)

Directions

The turnips and fresh pineapple are most easily prepared with a food processor.
Combine all the ingredients, tossing well, and chill at least 1 hour to blend flavors.
Garnish with fresh mint sprigs.
