Turnip Puff Recipe
Ingredients
4 medium turnips
2 tablespoons butter or margarine
2 beaten eggs
3/4 cup soft bread crumbs
1 tablespoon finely chopped onion
1 tablespoon snipped parsley
1 tablespoon sugar
1 teaspoon salt
1 teaspoon lemon juice
Directions
Peel and cube turnips (measure about 3 cups).
Cook, covered, in small amount of boiling salted water till tender, about 20 minutes.
Drain.
Add butter and mash.
In bowl combine eggs, bread crumbs, onion, parsley, sugar, salt, and lemon juice.
Add mashed turnips; mix well.
Turn into ungreased 3 cup casserole.
Bake at 375° till set, 25 to 30 minutes.
