Turnip Pickle Recipe
This turnip pickle or shalgam ka achar is a spiced vegetable pickle. Made with garlic, chili powder, cumin and onion seeds, the turnip pickle is made with added dry dates and set in the sun to mature before it is used.
Ingredients
| Turnips | 1/2 Kilogram | |
| Mustard oil | 1 Cup (16 tbs) | |
| Garlic | 15 Clove (5gm) | |
| Vinegar | 1 Cup (16 tbs) | |
| Sugar 3/4 to 1 cup | ||
| Dates | 15 | |
| Seedless golden raisins 6 tsp | ||
| Peppercorn | 1 Teaspoon | |
| Chilli powder | 2 Teaspoon | |
| Onion seeds 1 tsp | ||
| Cumin seeds | 1 Teaspoon | |
| Salt 1/2, cup | ||
Directions
1) Make a smooth mixture of ground spices and sugar.
2) Grind dates and raisins with a little vinegar.
3) Add salt to the cleaned, peeled thick round slices of turnips and keep for 8 hours.
4) Fry the ground garlic in hot oil till they get golden brown.
5) Add turnips to the pan and fry till they dry up.
6) Mix all the ingredients and store in a jar.
7) Keep in the sun for 6 days.
