Turnip Frittata Recipe

Ingredients
4 tablespoons butter or margarine, divided
1 medium-size onion, finely sliced
1 1/2 pounds fresh turnips, peeled and coarsely shredded
1 clove garlic, crushed
3 eggs, slightly beaten
1/3 cup half-and-half
1/2 cup shredded Cheddar cheese
Salt and pepper to taste

Directions
Melt 3 tablespoons of the butter or margarine in a skillet.
Add onion and saute until clear in color, but not brown.
Add turnips and cook for 4 minutes, stirring constantly.
Cover and steam for 4 minutes.
Add garlic and remove from heat.
Combine eggs, half-and-half, and cheese; pour over the cooked turnips.
Mix well.
Add salt and pepper to taste.
Heat remaining 1 tablespoon butter or margarine in a heavy, ovenproof frying pan until it begins to bubble.
Add the turnip mixture, and cook over medium heat until it begins to set around edges.
Sprinkle lightly with paprika.
Bake, uncovered, at 350° for 20 minutes, or just until firm.
