Turnip Coulis Recipe

Ingredients
1 tbsp (15 ml) butter
1 1/2 cups (375 ml) turnip, cut into pieces
2 tbsp (30 ml) onion,chopped
1 garlic clove, finely sliced
1 cup (250 ml) chicken stock
Salt and pepper
1 tsp (5 ml) chopped parsley
Directions
– In a saucepan, melt butter and saute turnip, onion and garlic without browning. Pour chicken stock into mixture, and season with salt and pepper. Sprinkle with parsley and simmer for 20 minutes.
– Run mixture through blender, then return to saucepan and cook for 5 minutes.
– Adjust seasoning, then pour through sieve and serve.
