Ingredients

 Sugar2 Cup (16 tbs)
 Water3 Cup (16 tbs)
 Gelatine4 Tablespoon
 Cream of tartar1/4 Teaspoon
 Cornflour2/3 Cup (16 tbs)
 Icing Sugar1 1/2 Cup (16 tbs)
 1/4 teaspoon rose water cochineal
 Icing Sugar3/4 Cup (16 tbs)

Directions

1.
Lightly oil a lamington tin.
2.
Mix sugar, water and gelatine in a Pyrex jug.
3.
Cook for 7 minutes on HIGH.
Stir.
Cook a further 6-7 minutes on HIGH.

Mix together cream of tartar, cornflour and icing sugar.
Stir in sugar syrup.
5.
Cook for 5-6 minutes on HIGH.
6.
Mix in rose water and colouring until mixture is pale pink.
7.
Pour into prepared tin.
Refrigerate until set.
8.
Cut into 3cm squares with a wet knife.
9.
Toss squares in icing sugar.
NOTE: Rose water is available from delicatessens or health-food shops.
