lettuce leaves
 
2 cups lamb's brains, precooked, thinly sliced, chilled
 
3 tomatoes, cut into wedges
 
6 radish roses
 
1 green pepper, cut into strips
 
juice and rind of 1 lemon
 
3 tablespoons oil
 
1/2 teaspoon salt
 
1 sprig mint, chopped fine

Directions

Arrange lettuce on platter.
Top with brains.
Garnish with tomatoes, radishes and green peppers.
Blend lemon juice, rind, oil and salt together and drizzle this dressing over top of salad.
Garnish with mint.
