Directions

GETTING READY
1 Cut the pumpkin flesh into thin, rectangular pieces measuring about 3 x 1 1/2 inches.
2 In a very wide, flameproof earthenware casserole dish, put the pumpkin pieces.
3 Sprinkle with the sugar.
4 Pour in just enough water to cover.
5 Set aside for 24 hours.

MAKING
6 Place the casserole dish on a moderate heat and bring to a boil.
7 Reduce the heat, and simmer gently for 45 minutes, stirring occasionally, until the pumpkin is tender.
8 Allow to cool at room temperature.

SERVING
9 Serve in small bowls or dishes, sprinkled with the chopped walnuts.
