1 package (10 ounces) frozen wax beans
1 tablespoon finely chopped onion
5 tablespoons butter or margarine
5 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 chicken-bouillon cube OR 1 envelope instant chicken broth
2 cups milk
4 tablespoons grated Parmesan cheese
2 cups cubed roast turkey
2 tablespoons cream for whipping
Directions
1 Cook green and wax beans in separate medium-size saucepans, following label directions; drain well.
Set aside 1/4 cup of each for garnishing baking dishes in Step 5.
2 Saute onion in butter or margarine just until soft in a large saucepan.
Stir in flour, salt, and pepper; cook, stirring constantly, just until bubbly; add bouillon cube or chicken broth.
3 Stir in milk; continue cooking and stirring until bouillon cube dissolves and sauce thickens and boils 1 minute.
Stir in 2 tablespoons of the cheese.
Set remaining 2 tablespoons cheese and 1/2 cup of the sauce aside for topping in Step 6.
4 Stir beans and turkey into remaining sauce; spoon into 6 individual broilerproof baking dishes, or a broilerproof 8-cup shallow baking dish; cover with aluminum foil.
5 Bake in moderate oven (350°) 30 minutes, or until bubbly-hot; remove from oven.
Arrange saved beans, spoke fashion, on top.
6 Beat cream until stiff in a small bowl; fold in remaining 1/2 cup sauce; spoon into centers of baking dishes, dividing evenly.
Sprinkle with remaining 2 tablespoons cheese.
7 Broil, about 4 inches from heat, 3 to 5 minutes, or until sauce puffs up and turns golden.
