Tasty Turkey Quesadilla Recipe Video
I'm headed out of town and won't be making any Post-Thanksgiving leftover meals this year so I pulled this one from the archives. It's a yummy way to create a completely different meal using your Turkey Day leftovers!
I like topping it with some left over Cranberry Sauce!
Ingredients
2 whole wheat tortillas
2/3 cups of shredded pepperjack cheese
1 cup of cooked turkey, cut into bit sized chunks
½ cup of pinto beans
1 jalapeno thinly sliced
½ green apple thinly sliced
½ tsp thyme
Directions
1. Heat tortilla to dry pan over medium heat and flip it over a few times until it is warmed thru.
2. Add 2 tbsp of cheese over the entire tortilla. On ½ of the tortilla add ½ cup of turkey, ¼ cup of pinto beans, a few jalapeno slices and 3 slices of apple (you'll love it!). Sprinkle with ¼ tsp of thyme. Add another 2 tbsp of cheese and fold tortilla on top of itself.
3. Press down with spatula and flip. Cook until cheese is melted and tortilla is heated thru. Allow a few minutes for quesadilla to cool down before slicing and enjoy!
