Turkey Mandarin Recipe

Ingredients
Green Onion – 2 tablespoons, finely chopped
Celery – 1 ½ cups, diced
Salad Oil – 2 tablespoons
Cooked Turkey – 2 cups, diced into 1 inch pieces
Toasted Almonds – ¼ cup, coarsely chopped
Lemon Rind – ½ lemon, grated
Mayonnaise – 2/3 cup
Salt and Pepper to taste
Lemon Juice – 1 tablespoon
Potato Chips – 1 cup, crushed
Cheddar Cheese – ½ cup, grated
Directions
GETTING READY
1) Preheat the oven to 375F
MAKING
1) In a frying pan, pour in the oil and sauté the onion and celery till tender
2) In a bowl mix together the turkey, toasted almonds, lemon rind and lemon juice
3) Spoon in the mayonnaise and toss gently to coat everything
4) Add the required pepper and salt
5) Sprinkle in the cheese over the top and scatter the potato chips around the edges
6) Bake in the oven for 25 minutes at 375F till the cheese is all melted
