Recipe Story

I made this last year for Thanksgiving ,and they are already bugging me to see if it's on the menu this year. I made the shredded thigh meat using a French Technique called Confit, slow cooking it in it's own fat. You can just slow roast or braise the thighs and get the same result Realistically this recipe is for your leftover turkey meat, but its so good you might want to serve it the first time around!!!

Ingredients

 
3 russet potatoes, washed and diced 1/4"
 
4 slices bacon
 
8 ounces cooked turkey, dark meat like thighs are best
 
3 tablespoons onions, diced 1/4"
 
2 tablespoons red pepper, diced 1/8"
 
Salt, to taste
 
Peppercorns, freshly cracked
 
1 teaspoon fresh thyme

Directions

Cook the bacon in a large heavy skillet like a cast iron pan until very crispy. Remove the bacon and drain it on a paper towel. Once cool, chop the bacon into small pieces. Reserve.

Add the potatoes to the pan and cook in the rendered bacon grease for 10-15 minutes until they begin to brown and get crispy. Push the potatoes to one side of the pan and add your onions and peppers. Cook for 3-4 minutes and add the turkey. Cook for one to two more minutes and stir all together. Season the hash with salt and cracked pepper. Add the thyme and the chopped bacon pieces. Stir again and check the seasoning. If you have any leftover cooking fat from the roast turkey, that is great to season the hash with as well.

Place a generous pile of the hash in the center of your serving platter and watch it disappear!!! .
