1/2 cup milk
 
3 tablespoons flour
 
1 (14 ounce) can chicken broth
 
2 cups broccoli florets
 
1/2 cup chopped plum tomatoes
 
1 tablespoon chopped fresh parsley
 
1/4 teaspoon salt
 
1/4 teaspoon freshly ground black pepper
 
1 tablespoon vegetable oil
 
1 1/2 pounds fresh turkey breast cutlets
 
2 tablespoons grated Parmesan cheese

Directions

Whisk the milk and flour together in a small bowl.
Combine the milk mixture and chicken broth in a large saucepan over medium heat.
Bring to a boil, stirring constantly.
Reduce heat to low.
Add the broccoli and simmer for 5 minutes.
Stir in the tomatoes, parsley, salt and pepper.
Heat the vegetable oil in a large skillet over medium heat.
Cook the turkey cut lets 2 to 2 1/2 minutes on each side.
Sprinkle with Parmesan cheese.
Serve with gravy.
