Turkey A La King Recipe
Ingredients
| 2 1/2 cups giblet or chicken broth 625 mL | ||
| Milk | 1 1/2 Cup (16 tbs) | |
| 1 cup 18 percent cream 250 mL | ||
| Onion | 2 Tablespoon, chopped | |
| Green pepper | 1/2 Large, chopped | |
| 1/4 lb fresh mushrooms, chopped 125 g | ||
| 1/2 cup turkey fat or butter 125 mL | ||
| Flour | 1/2 Cup (16 tbs) | |
| 2 egg yolks, slightly beaten | ||
| Sherry | 1/4 Cup (16 tbs) | |
| 1/4 cup pimento juice 50 mL | ||
| Salt | 2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Pimento | 1/2 Cup (16 tbs), chopped | |
| Cooked turkey | 4 Cup (16 tbs), diced | |
Directions
Heat broth, milk and cream together in a double broiler.
Saute onion, green pepper and mushrooms in hot turkey fat until tender.
Stir in the flour, then add hot broth mixture slowly and cook until thick and smooth, about 6 or 7 minutes.
Stir in the egg yolks mixed with sherry and pimento juice.
Cook 2 or 3 minutes, then add remaining ingredients.
Taste for seasoning.
