Turkey A La Chinoise Recipe

Ingredients
| Turkey | 110 pound | |
| Water | 12 Cup (16 tbs) | |
| Soy sauce | 3 Cup (16 tbs) | |
| Sherry | 1 Cup (16 tbs) | |
| Sugar | 3 Tablespoon | |
| Salt | 1 Tablespoon | |
| Pepper | 1/4 Teaspoon | |
| 4 stalks scallions | ||
| Ginger slice | 8 | |
| Sesame seed oil | 1 Tablespoon | |
| Head of lettuce | 1/2 | |
Directions
Put 12 cups water in a very large cooking vessel and add the soy sauce, sherry, sugar, salt, pepper, scallions and ginger and bring to a fast boil.
Lower the turkey into this liquid and boil for about 40 minutes.
Transfer the turkey carefully to a roasting pan and pour 2 1/2 cups of the liquid over the turkey.
Preheat the oven to 450 degrees and roast the turkey for about 1 hour, basting every ten minutes.
Turn the heat up to 550 degrees and pour sesame seed oil over the turkey and roast for another 15 minutes.
Cut off the breast whole and cut across the grain into pieces 1 1/2 by 1/2 inch and place on a bed of lettuce, skin side upward.
This turkey may also be served whole and carved Western style.
