Turkey Wild Rice Paprikash Recipe
Ingredients
| 2 cups cooked wild rice | ||
| Slivered almonds | 2 Tablespoon | |
| Onion | 1 Medium, thinly sliced | |
| 2 tablespoons reconstituted natural butter-flavored mix | ||
| White wine | 1/4 Cup (16 tbs) | |
| Paprika | 2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| 12 oz. turkey cutlets | ||
| 1/3 cup low-fat plain yogurt | ||
| Salt | 1/4 Teaspoon | |
Directions
Prepare wild rice.
Stir in almonds.
Set aside.
In 2-quart casserole, combine onion, butter-flavored mix, white wine, paprika and pepper.
Cover.
Microwave at High for 4 to 6 minutes, or until onion is tender, stirring after half the time.
Add turkey cutlets, turning to coat with onion mixture.
Cover with wax paper.
Reduce power to 70% (Medium High).
Microwave for 5 to 6 minutes longer, or until turkey is no longer pink, turning over and rearranging after half the time.
Place wild rice on serving platter.
Remove turkey from cooking liquid and arrange on rice.
Stir yogurt and salt into cooking liquid.
Spoon sauce over turkey.
Reduce power to 50% (Medium).
Microwave for 2 to 4 minutes, or until heated.
